After every cook
Wipe the apron down with a dry or barely-damp cloth while the grease is fresh, before it sets. This quick habit prevents buildup and is most of the maintenance you'll ever need.
For grease stains
If grease has soaked into a spot, blot it, then sprinkle cornstarch or talc over the area and leave it overnight to draw the oil out. Brush it off and clean with a little mild soap and water.

Wipe with a damp cloth and mild soap, going with the grain, then wipe clean and air-dry away from heat.
Condition periodically
